This gentle, aromatic khichdi is perfect for days when you crave warmth and simplicity. Soak ½ cup rice + ½ cup moong dal (or toor or dal of your choice) together. In a pot, warm a little ghee, add cumin, ginger and a pinch of asafoetida (hing).
Add the rice-dal mix, turmeric, salt, and 3–3.5 cups water. Cook until soft and creamy.
Top with a spoon of desi ghee and freshly chopped coriande, chillies.
